To those who shared my excitement yesterday at the local tarragon, here is the promised recipe for one of my favorite amuse bouches. My husband and I shared a late night meal earlier in the week. I served this as a part of that meal. Enjoy!
about 10 walnuts, shelled and roughly chopped
1 granny smith apple, peeled and finely diced
1/4 cup of loosely packed tarragon, stems removed
1 teaspoon mayonnaise
squeeze of lemon juice
fresh black pepper, to taste
salt, to taste
Mix the walnuts, apple and tarragon. Add the mayonnaise and lemon juice. Stir to coat. Add the pepper and salt to taste. Serve in small dishes just prior to serving your meal.
